Croquetas
de Jamón Serrano
(Serrano Ham Croquettes)

Ingredients:
9 oz. Serrano (ham finely diced)
3 eggs, (1 hardboiled and ground)
2 tbls. Butter
3 tbls. Flour
1 _ cups Whole Milk
1/8 tspn. Ground Nutmeg
1 _ cups Breadcrumbs
_ medium White Onion (finely minced)
Oil (for frying)
TT Salt & Pepper
Procedure:
1. Melt
the butter over medium heat. Add onion and sauté
until soft. Add the ham and sauté 2 minutes more.
Add the flour and stirring constantly cook until the mixture
is pale yellow.

Slowly pour in the milk while stirring
and cook on low heat stirring constantly for 10 minutes
until a thick béchamel forms.

Remove mixture from heat and fold in the
egg, nutmeg, salt & pepper to taste
4.
Using 2 soup spoons form croquettes in
an oblong shape about 1 inch long and _ inch in diameter.
Dip the croquettes in the beaten eggs and then coat evenly
with the breadcrumbs.
5.
Fry until browned and crispy – serve
immediately.
